In practice, this works quite well. When we’ve tested shots pulled with pre-infusion vs shots pulled without we notice significantly fewer instances of channeling – that’s when water finds a path of low resistance and flows through it, avoiding nearby grounds.
Should extraction time include pre-infusion?
As long as your pre-infusion time is always supposed to be 7 seconds then it shouldn’t be a problem. If the pre-infusion times are off it means something needs to be resolved and you wouldn’t notice this if you’re not tracking time.
