You cannot take OTA updates normally with an unlocked bootloader. The phone will download the update, but the update will fail.

Does unlocking bootloader stop updating?

Unlocking the bootloader will not affect OTA updates at all. Neither will root alone but if you change anything on the system partition the update will likely fail.

Yes, you will get system updates even after rooting your device. Xiaomi doesn’t void warranty of your device if you root it unless you install a custom ROM. Also if you have flashed custom Rom you will not get OTA/system updates remember!
